My favourite way to do Chia Pudding

Thermomix Banana Cinnamon Chia Pudding Recipe

This will make 2 large portions (sometimes I split into 4)
All you need to do is top with your favourite fruit/nuts/seeds/maca and enjoy :)

Ingredients:
2/3 cup cashews
2 cups water
2 tsp vanilla
1 ripe banana
1/2 cup chia seeds
1 tbs rice malt syrup (or honey/maple syrup)
1 tsp cinnamon
1/2 tsp ground ginger

Method:

- Soak 2/3 cup raw cashews for 1hr (if you have time), then drain and rinse
- Blend cashews with water & vanilla 10 sec/speed 10
- Add banana and blend 5 sec/speed 5
- Add chia seed, rice malt syrup, cinnamon and ginger and mix 5 secs/reverse/speed 5
- Pour into airtight containers and set overnight
- makes 2 large portions (sometimes I split into 4)
- top with your favourite fruit/nuts/seeds/maca and enjoy :)
