Lamb Koftas Recipe for Lunch
Easy Lamb Kofta Recipe
Lamb meatballs would have to be on my family's top food choices. I love how easy it is, lots of protein and iron and i can make a mountain and know they'll all be eaten.
Lamb Koftas are great for lunch boxes for the whole family. They can be eaten cold, are easy to manage and can be teamed up with so many things or enjoyed on their own.

Ingredients
1kg lamb mince
1 brown onion, chopped
2 tsp crushed garlic
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh parsley
1 teaspoons smoked paprika
1/2 teaspoon ground ginger
2 teaspoons ground cumin
1 teaspoon ground coriander
Additional (if desired)
1/2 teaspoon dried chilli flakes (if desired)
2 teaspoons Chia seeds (for Omega 3 and to help them hold better)
Method
I use my hands to mix and roll so make sure you have trays prepared and i find if my hands are slightly damp when rolling and only use fingers to roll its a lot cleaner and easier.
Place all ingredients into a large bowl and mix to combine.
Have a large tray or board ready to place rolled balls.
Using your fingers gather meat and push together then roll into a ball. I make mine about golf ball size but you can make them larger or smaller just adjust cooking time.
Once all your mixture is rolled leave to rest whilst you get cooking ready to cook.
Cooking
You can use a griddle or a fry pan to cook. Cook in batches and use oil in a medium to high heat. Cook about 3 - 4 mins each side, don't turn until its well sealed so they don't stick to pan.
You can also cook in the oven! line a large baking tray and cook at 160 degrees Celsius for about 20 mins - turn them half way.
Serving
You can see how we take them to work or park here served with garlic or tatziki dip, Tabbouleh, Pita and veg. The kids take it to school with some pita bread and veggies
