Delicious Spinach and Ricotta Puff Pastry Wheels
I love spinach and ricotta pastry... just sometimes i want a quick and easy way to enjoy. These are great for snacks, party food and perfect for lunch boxes.
This recipe is made with one sheet of ready made Puff Pastry sheet, its easily adaptable to make larger quantities.
Spinach and Ricotta Puff Wheels Recipe
Ingredients:
100g of cooked spinach. (I buy the frozen spinach in small portion servings so its easy to measure out and defrost)
4 tablespoons of Ricotta
1 sheet of ready made Puff Pastry
2 tablespoons grated tasty cheese
3 tablespoons tomato passata
1 teaspoon of smoked paprika (use hot if you'd prefer)
Salt & Pepper to taste
Method:
Preheat oven to 180g fan forced
Line a tray with baking paper.
Mix together Spinach and Ricotta
Season with salt and pepper and Paprika
Lay flat your pastry sheet without the backing sheet.
Spread over the tomato passata.
Now spoon over and spread out the spinach and ricotta mix over the passatta.
Sprinkle over tasty cheese
Now roll up. You want to keep it fairly neeat and tightly so it holds its shape.
Using a sharp knife slice your log into rounds no more than 1cm thick. Keep the rounds the same width for even cooking.
You should get at least 12 rounds.
Lay flat on a baking tray and spray with oil before placing in the oven.
Cook 15 - 20 mins or until golden on outside.
