Easy Tasty Cheese Muffins with Don Ham
Ham and Cheese Muffins are so easy to make, they can be frozen and great for lunch boxes. To make these more fun and a little different to the traditional my kids love to make the DON® Champagne Thinly Sliced Leg Ham look like little flowers in the top of the muffins.
Don Ham and Cheese Flower Muffin Recipe
Ingredients
18 slices of DON® Champagne Thinly Sliced Leg Ham
2 cups Self Raising Flour
1 tsp baking powder
2 tsp sweet paprika
2 tbsp finely chopped chives
2 cups grated tasty cheese
2 eggs
1 cup water
1 cup milk
Salt and Pepper to taste
Method
Preheat your oven to 170 Celsius and line your muffin tray.
Slice your DON® Ham slices into three.
Large bowl add 2 cups of Self Raising Flour and sprinkle over baking powder and paprika.
Make a well in centre of flour and add your two eggs, milk and water. Mix well till you have a smoother batter.
Add the tasty cheese and chives and mix in.
Now spoon mixture in until each tray liner is about 1/3 full.
Using your slices of DON® Champagne Thinly Sliced Leg Ham that have been cut into three, take the middle piece and Roll up, place it in the centre of the muffin. Now repeat with the rest of the ham putting it in the muffin around the centre piece. Each muffin should have 4 - 5 rolled pieces of ham in it.
Carefully top up your muffins with the rest of the mixture.
Bake in oven for about 25mins. If the ham starts to burn turn your oven down cook longer and slower. Muffins should be golden on top. Test with skewer if unsure, skewer should come out clean when done.
