Apple and Spice Muffins
I have found a new way i love the apple in my muffins. It looks so pretty and the apple is soft and baked and chewy and just so good!
Its a basic thing to do and makes a beautiful Apple Flower Muffin.
Ingredients:
2 large Apples
90g Butter, very soft
1 Egg, room temp.
1 1/4 cup Milk
1/4 cup Castor Sugar
2 cups Self Raising Flour
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 baking powder
extra: cinnamon,nutmeg, brown/caster sugar.
Method:
Line your muffin tin with cases and preheat your oven to 150 degrees Celsius (302 Fahrenheit)
Slice your apples thinly and evenly. I used a Mandolin. Cut the large slices in half.
In a large bowl:
Mix the butter and sugar until well combine light and fluffy.
Mix in the egg and milk
Add your cinnamon and nutmeg
Gradually add the flour and baking powder combining well
Spoon batter into muffin tin evenly they should be about 3/4 full.
Now place your apple slices into the muffin. Start from the outside and push them in slice at a time, push them right down they will pop up when the muffins bake and rise in the oven.
Once all filled sprinkle tops with a little more cinnamon, nutmeg and some brown sugar and bake.
Bake for approx 35mins at 150 degrees Celsius fan forced.
