If you dont mind straying from tradition you'll love this one
Its delicious! Its moister and tastier and very moreish. Its also Gluten Free and Egg Free.
The Best Gluten Free Weet-Bix Slice
Ingredients
3 Weet-Bix Gluten Free crushed
1 1/4 cups Almond Meal
1 1/4 cups Desiccated Coconut
125 grams Butter
1 Tbls Chia Seeds
1/2 cup Brown Sugar
2 tbs Flaked Coconut (to sprinkle on top)
Icing
3/4 cups Icing Sugar
2 tbs Cocoa Powder
2 tbs hot water
Method
Line a slice tray with baking paper.
Mix dry ingredients (not the flaked coconut) together in large bowl.
Melt the butter and Pour in and mix well.
Press into slice tray and bake at 170C fan forced for 20-25 minutes.
When slice is cool, ice with chocolate glaze icing and quickly sprinkle with coconut flakes.
Icing: Add hot water to icing sugar and cocoa. Mix well, pour over slice and spread evenly.
note: we also used a little hundreds and thousands here but thats only so we could tell our recipe testing versions apart.
