Small and delicious bites you have to try!

Pikelets don’t have to just be the sweet after school treat for kids they can be a fabulous little bite of goodness for you too.  Whether its a weekend brunch a party canape or morning tea treat with a friend. These are easy to make and construct and are so delicious.

Use regular Cream Cheese or try the Philadelphia Lemon Cream Cheese.




For the topping


Pikelets Method

  1. Start with room temperature ingredients or slightly warmer than the fridge.
  2. Whisk up the milk, zest of one lemon and lemon essence till its a little frothy.
  3. Add in flour and bicarb and then the egg combine well.
  4. Lastly add the Cream Cheese and whisk it all up. I use my hand held mixer with the whisk attachment.

Pikelets Cooking

  1. Use a clean fry pan over medium heat
  2. Melt about 1/2 tablespoon in the pan. When it is melted and frothy it is ready to go.
  3. Start with one spoonful of batter into the pan. It should start to cook straight away and little frothy bubbles should appear around the base of the pikelet.
  4. When bubbles start to appear on the top of the pikelet then its ready to turn.
  5. You want to flip the pikelet in one move so gently lift using your egg flip tool and slide the blade completely underneath before quickly flipping over.
  6. Be sure not to over crowd your fry pan.
  7. Cool on paper towel before constructing for serving


To Serve

Once cool you can top the pikelets with a teaspoon of creme fraiche or natural yoghurt

Lightly sprinkle some lemon zest and finely shredded mint leaves sparingly.

Top with a small rolled piece of Smoked Salmon.

You can make the Pikelets in advance and you can prepare the topping ingredients in advance but don't construct until nearly ready to serve.
