Refreshing, lean and healthy fresh spring rolls
Today we're having Turkey Fresh Rice Paper Rolls thank you to Steggles.
Fresh Turkey Rice Paper Rolls
Ingredients
100g vermicelli noodles
300g Turkey Shortcuts Mince
1 Tbsp Kecap Manis
20 x 20cm round rice paper sheets
1 carrot, peeled and finely julienned
1 Lebanese cucumber, finely julienned
1 large celery stalk finely julienned
1/2 Red Capsicum sliced finely lengthways
1/2 cup finely shredded lettuce
1/2 cup fresh Mint leaves
1/2 cup coriander leaves
1/2 bunch chives.
Vietnamese dipping sauce, to serve
Method
1. Soak noodles in boiling water for 10 minutes until soft. Drain well and set aside. Meanwhile, fry mince in a pan over medium heat, breaking up any lumps with a spoon. Remove from heat and stir through Kepcap Manis Set aside.
2. Dip one rice paper sheet into warm water and place onto a clean, damp cloth. Place two Mint leaves in the centre of the sheet, top with some carrot, lettuce, cucumber,a slice capsicum, coriander, turkey mince, noodles and chives.
3. Roll up, folding edges in to enclose the filling. Repeat with remaining ingredients to make about 20 rolls. Refrigerate covered until serving.
Serve with Vietnamese dipping sauce.

Thanks for stopping by. I'd never made them with Turkey Mince either, but i tried some made by Steggles the other week and they were so tasty. Give them a go.

Yeah its one of those things that gets better with practice. I love eating them. I usually cut up enough veg for two nights have have them a couple of times. saves the prep time. Thanks for linking in xxx
