Zucchini Slice Recipe
Zucchini Slice is a family staple at our home. Enjoyed hot from the oven, room temperature or cold its so versatile and delicious.
Zucchini Slice Recipe
Ingredients
375g zucchini, finely grated
1 large spanish onion, finely chopped
3 rashers bacon, finely chopped
3/4 cup grated tasty or cheddar cheese
1/4 cup grated parmesan cheese
6 cherry tomatoes
2 tablespoons fresh basil chopped
1 cup self-raising flour
1/2 cup vegetable oil
5 eggs
salt, pepper
Method
Preheat oven to 180°C (160°C fan-forced).
Grease or line a family casserole dish or lamington tin (16cm x 26cm).
In a large bowl, combine zucchini, onion, bacon, tasty cheese, basil, sifted flour, oil, and lightly beaten eggs. Season with salt and pepper.
Pour into your tin or dish and top with parmesan cheese and cherry tomatoes.
Bake for about 30-40 minutes, or until set and top browned.
Cut into slices to serve.
Note:
Zucchini Slice is a really versatile dish. You can double the recipe easily and the slice can be frozen.
You could easily add some mushroom, capsicum or onion to your slice and you can leave out the bacon to make it vegetarian. Great dish to start with and then adapt to suit your needs.
Zucchini Slice Food Processor Recipe
To make zucchini slice I almost always use the food processor. You'll need a large bowl on your machine or be sure to transfer between different vegetable gratings.
Method
Preheat oven to 180°C (160°C fan-forced).
Grease or line a family casserole dish or lamington tin (16cm x 26cm).
In the large bowl of your food processor using grating blade - grate zucchini, onion and tasty cheese.
Remove from processor into a large mixing bowl.
Change blades in food processor to the chopping/mixing blade and add your eggs. Pulse for a couple of seconds to combine then add basil and oil.
Finally add slowly your flour, salt and pepper.
Once you have a batter pour over the Zucchini mix in the large bowl.
Add your finely chopped bacon to the large bowl and stir through.
Pour into your tin or dish and top with parmesan cheese and cherry tomatoes.
Bake for about 30-40 minutes, or until set and top browned.
Cut into slices to serve.
