Easy and Delicious Family Roast



Roast Chicken is one of the most popular family meals ever.  We love our Roast Chicken and I love making such a tasty and delicious meal.

1 Family Roast Chicken we used Steggles.

2 Lemons (1 zested keep zest separate)

2 Tablespoons Sumac

4 Cloves garlic crushed

1/3 cup Oil

1 small bunch of Thyme

Salt and Pepper to season



Preheat oven to 220°C/200°C fan-forced.

Rinse chicken (including cavity). Discard neck. Pat dry with paper towel.

Tie legs with kitchen string. Tie the bunch of Thyme together too.

Into the cavity place the two lemons just into halves (or quarters) and the bunch of Thyme minus a few sprigs saved for serving.

Into your oil add the Sumac, crushed garlic and the lemon zest mix it together and then rub over the whole chicken. I use my hands to ensure its well covered.

Season with some salt and place chicken, breast-side up, on a rack in a roasting pan.

Place pan on lowest oven shelf. Roast for about an 1 hour for a 1.5kg Chicken. Follow the cooking times for your chicken as per the instructions on your bird or when the juices run clear when the chicken thigh is pierced with skewer.

You'll want to re baste your chicken at least a couple of times throughout the roasting process to ensure it doesn't dry at and that it still gets crispy.  I just remove the roast tray from oven and use a large spoon to re baste.

When done remove from oven and cover with foil for 10/15mins before carving.


If you are Roasting Vegetables as well i often put the potatoes, carrots or pumpkin in the same pan anything else goes in a separate pan.  Depending on what your vegetable is and the size its cut best time to add is at about the 40minute mark.
