Chicken and Gluten Free Weet-Bix for a quick and easy dinner
Busy afternoons with kids sports mean i need to feed three hungry kids quickly when we get home. I want something that cooks fast, is a good source of protein and omega 3 and ofcourse they will eat it!
This quick dinner has all the above and is gluten, dairy and egg free.
Gluten Free Weet-Bix and Chicken Meatballs
Ingredients
500gms Lean Chicken Mince
1 cup grated Zucchini
3 tablespoons Pesto (i used homemade but any quality pesto will do)
1 tablespoon Chia Seeds
2 crushed gluten free Weet-Bix
extra
3 finely crushed gluten free Weet-Bix for coating
Method
- In a large bowl mix together all the ingredients except the crushed weetbix for coating.
- I find it easier just to use my hands this ensures its all mixed well.
- Roll all the mixture into balls, just larger than a tablespoon size. You should get approx 18. (You can make them larger, just adjust the cooking time.)
- Once done roll the meatballs through the crushed Gluten Free Weet-Bix for coating. Pressing down a little to ensure it sticks.
- Cook in a medium heat frying pan in a little oil 10 - 12 minutes each side. The Gluten Free Weet-Bix are a little darker in colour so make sure the chicken is cooked.
Serve with Salad or Vegies on even on pasta or a burger. I served mine here on simple green salad with some lemon zest and a squeeze of lemon.
note: You could cook these in the oven or on the bbq. They are really versatile and if you have any left overs, they make a nice lunchbox snack.
Recipe can easily be doubled.
