Beef Meatballs Stroganoff. Stroganoff with a difference.

 

Meatballs make a change to the beef strips of traditional Stroganoff. Budget friendly way to make a delicious family meal. Also makes it easier for the kids to eat.

Stroganoff with Beef Meatballs

Ingredients

for Meatballs

500g Beef Mince

1 egg

1/2 cup fresh breadcrumbs

2 tablespoons fresh parsley and chives. * sometimes i add thyme or other herbs i have in garden.

for Stroganoff

1 Brown onion  cut into medium slices

300ml Sour Cream

300g button mushrooms sliced

200g Bacon chopped roughly (rind removed)

1 tablespoon smoked paprika

2 tablespoons Tomato Paste

1 tablespoon Worcestershire sauce * i usually don’t have this so i use a combination of soy sauce and smoky BBQ sauce like HP.

1/2 cup of beef or vegetable stock

2 teaspoon chopped garlic

to serve

Rice or Pasta to serve

Fresh Parsley or Chives to garnish

 

Method

for Meatballs

Using a large bowl combine all ingredients.

I find it easiest to just use my hands to mix it all up and form the balls.

The best way for me to make the meatballs is to use slightly wet hands and get a heaped tablespoon size of mince and just roll using the flat part of my fingers. No need to get your whole hand in there to make the balls. If you just run your hand under water and shake off every couple of balls you'll be fairly mess free.

leave meatballs to rest whilst you setup fry pan. Use a large fry pan as you'll use this all the way through.

Over medium heat with a little cooking oil you want to cook the meatballs until they are completely cooked. This will be easier in batches. Remove them and leave them all to drain on plate and set aside whilst you cook the rest of the Stroganoff.

for Stroganoff

In the same fry pan ( you may need to wipe it out and add some more cooking oil)

Add your onion and garlic. Cook till the onion has softened and slightly translucent.

Then add to the onion the bacon and mushrooms. Cook for five or so minutes until the mushrooms has gone tender.

Now add back into the pan the meatballs and fold them through all the onion, mushrooms and bacon.

To the pan the paprika, tomato paste and Worcestershire sauce and your stock stir through

Remove from heat and stir in the sour cream combining well.

 

Serve with pasta or rice

Garnish with chives or parsley
