A Super Fast, Super Healthy and Super Delicious Pasta

 

Spinach and Kale are two super foodds that you should really be getting into you and your family as much as possible.  This is one of the easiest dishes to cook, its cheap, it can be made in bulk and its so good for you that i tell my kids that if they concentrate they'll feel their bodies getting stronger with every mouthful. 

I use a handheld mxer for this but you can transfer into a regular blending mixer if you like just wait for it to cool down a bit ok.

Speedy Spinach and Kale Pasta

Ingredients

500g Spinach or Silverbeet, roughly chopped

500g Kale, roughly chopped

500g Ricotta

500g Pasta

1 tsp crushed garlic

1/4 teaspoon of tumeric, curry powder or paprika.

Salt and pepper to taste.

 

Method

Put your Pasta on to cook.

In a large saucepan over low to medium heat throw in all the spinach and Kale with a dash of water to get it started.  You want it to wilt not boil,burn or fry.  Just so its bright in colour and soft enough to be easily mooshed with the blender.

Remove the spinach mix and blend using a handheld mixer till all very fine.

Put the the saucepan back on the stove over low heat and stir through some garlic and stir for a minute. 

Turn off the heat and stir through all the Ricotta.

Add seasoning and your spice choice and stir through

Drain your pasta and stir through pasta and you're done!

Serve with some grated cheese or lemon zest

That looks so delicious!

Spinach is fantastic and a really easy green vegetable to grow. Going to make this next time I harvest... yum!
