Can't go wrong with a little Ginger Biscuit
I remember my Nan always had Ginger Nut biscuits when we'd visit as a little kids, they were sooo hard and crunchy I loved them BUT these are NOT like those 80's flashbacks at all. These Ginger Nuts are softer, actually contain nuts and have a lot less sugar. Excellent for something with your cup of tea - if the kids leave you any.
Ginger Nut Biscuits
Ingredients
2 Cups Self Raising Flour
3 Teaspoons Ground Ginger
1/4 Cup Almonds Crushed
1 Teaspoon Bicarb of Soda
125g Butter
1/2 Cup Caster Sugar
1 Tablespoon Golden Syrup
1 Egg
Method
Pre heat oven to 160c & line a baking tray with baking paper.
Cream the butter, sugar and golden syrup together in a large bowl or mixer.
Add your egg whilst mixer is on (or whisk before adding if your mixing by hand)
Add the flour, ginger and soda to mixer (Sift together into wet ingredients bowl if mixing by hand)
Add in your crushed Almonds (I blitz mine in the food processor)
Roll into balls and gently press down when putting on tray. You should get 24- 28 cookies pending on your sizing.
Bake for approximately 12 - 15 minutes or as they start to colour change on edges.
Allow to cool a little before removing from tray.
