Yummy Orange Cupcakes
Not everyone loves pumpkin, the orange pumpkin inspired foods of Halloween are often abandoned at our place because they are pumpkin but these Orange Cupcakes look the orange colour of Halloween yet tastes like yummy orange!
Orange Halloween Cupcakes
Ingredients
1½ cups sifted self-raising flour
¾ cup caster sugar
125g softened unsalted butter
2 eggs
⅓ cup milk (room temp)
2 teaspoons vanilla extract
Rind of 1 Orange
Orange Colour Gel - I use the Wiltons Colouring Gels which i just used 1 toothpick dip worth to colour the batch if you are going to use supermarket food colouring just add a few drops at a time. If you would like really bright orange cupcakes you may need to ad a little more flour.
Icing
250g really soft unsalted butter
2 cups sifted icing sugar
1/2 teaspoon vanilla extract
1 teaspoon orange juice
Colouring - I divided the icing into two and coloured one purple and one green.
Method
Preheat oven to 160°C.
Line your cupcake tin with paper patty cases.
Place the flour, sugar, butter, eggs, milk and vanilla in the bowl of an electric mixer and beat on medium speed for 6 minutes or until pale and smooth.
Sppon the mixture into your cupcake tin lined with paper cases.
Cook for 22–25 minutes or until cooked when tested with a skewer. Remove from tin and place on a wire rack to cool completely.
Method Icing
To make the icing, place the butter, icing sugar, vanilla, orange juice and colouring in the bowl of an electric mixer and beat for 10–12 minutes or until pale and creamy.
Put the icing into a piping bag and pipe icing onto cupcakes. Sprinkle with edible decorations.
