Plum and Orange Yoghurt Cake
This Plum & Orange cake made with Greek Yoghurt is beautiful. A dense cake with subtle orange aroma and flavour. Topped with baked plum this cake is so delicious, perfect with a good cup of tea and a friend.
Plum and Orange Yoghurt Cake
Ingredients:
- ¾ cup Castor Sugar
- 60ml Coconut Oil
- 2 Eggs (Separated)
- 300g Greek Yoghurt
- 1 Orange zested and juiced (separately)
- 1 ½ cups Self Raising Flour
- 1 teaspoon Baking Soda
Method:
Slice your plums into wedges and sprinkle with castor sugar. leave to rest. (if you ask your two year old to do this and they dump handful's of sugar then just brush it off a bit its fine)
Grease and line your cake tin. i used a 30cm springform.
Preheat your oven to 160 Celsius fan forced.
Using a mixer beat together the Coconut Oil and Sugar and then add egg yolks one at a time mixing them in well.
Add in the Orange zest and 2 tablespoons of the orange juice.
Mix in the yoghurt.
Slowly mix in the Flour and Baking Soda.
In a separate small bowl whisk the egg whites until they become soft peaks and then fold into the cake batter.
Pour into cake tin.
Place your plum wedges on top of your cake, pushing them in just a little.
Cook at 160 degrees Celsius fan forced for about 1hr 10min. I think sometimes the seasonal changes in the yoghurt can affect the timings as well as the differences in ovens so about an hour.
Leave to cool completely and dust with icing sugar to serve.
