Beautifully light and moist slice you'll love

This slice is perfect for Morning Tea, its easy to make and is light and flavoursome. Use store bought Marmalade or try our Fabulous Marmalade

Orange & Ricotta Slice

Ingredients

  • 1 sheet Short Crust Pastry
  • 350g Fresh Ricotta
  • 1/4 cup Almond Meal
  • 1/4 cup Castor Sugar
  • Zest of one Orange (or 1/2 lemon zest 1/2 orange zest is lovely)
  • 1/2 cup of good quality Marmalade (we have a fabulous recipe just here)
  • 2 eggs

 Method

  1. Preheat oven to 180 degrees Celsius.
  2. Line your 30x20cm tray with baking paper, leaving some over hang on lengthways sides.
  3. Cut to fit and press in your sheet of short crust pastry. It should cover the whole base of the tray.
  4. Pre bake your pastry for ten minutes. Cool Slightly
  5. In a bowl mix together well the Ricotta, Almond Meal, Sugar, Eggs and Zest.  You can use a processor but i find its pretty quick and easy to beat by hand. Leave mixture to rest
  6. Now onto your pre baked pastry spoon and spread evenly your marmalade all over the base. 
  7. Top with the Ricotta Mixture gently smoothing over so its fairly even.
  8. Bake for approximately 20 minutes or until filling has started to set and it starts to change colour around the edges.
  9. Remove and allow to cool for ten minutes in tray
  10. Lift the slice out using the baking paper and cool completely on rack or board.
  11. Dust with icing sugar to serve
