Sunday Link Party & Peanut Butter Choc Chip Cookies
Sport training was cancelled this afternoon due to the rain so we cooked up a batch of these Peanut Butter Choc Chip Cookies instead (second batch this week). I was sent these Blessed & Lucky Nut Spreads to try and they are really, really good. I have eaten so much peanut butter this week but i am in love with the Cinnamon Spice nut spread it is so good i can't believe i havent made the combination before! There are three in the Blessed & Lucky Nut Spread Range. Cinnamon Spice, Maple Bliss and Sweet Honey. There is no artifical colours, flavours or preservatives and they are available in major supermarkets.
Peanut Butter Choc Chip Cookies
Ingredients
125g Very soft butter
2 cup Self raising flour
½ cup brown sugar
1 tbsp White Chia seeds (they're good for you and help binding BUT optional)
1 tbsp cacao powder ( or cooca)
2 tbsp Peanut Butter
¾ cup Choc Chips (we use a combination of milk and dark)
1 cup Corn Cereal Flakes
Method
Cream butter and sugar together till light and fluffy
Add Flour, Cocoa and Chia seeds and mix well.
Soften the Peanut butter in Microwave about 10 seconds.
Fold the peanut butter in with the Choc Chips and Corn Flakes.
Bake at 160 celcius for approx 10 -12 min depending on your size of cookies.Take a heaped tablespoon and Roll into firm ball and then squish slightly when you put on tray
When they are cracked on top take them out they will harden as they cool.
