Have you tried five:am Granola?  Try our Granola Muffins

I was sent some Granola from Five:am to try, Have you tired them ?

I love their Yoghurts but didn’t even know they had Granola.

Its only a 450gm box which is fine for one person but for a couple or more i think a bigger box could be a better idea.

They are certainly tasty and full of all good stuff - in fact pop over to their website and have a look around its a great site with lots of interesting information.

I tested the Honey and Cinnamon Granola bars recipe on their website which was great.

I did double the coconut oil and the Malt Syrup because the first batch i made using this recipe didn’t mold well.   I also added 3 tablespoons of Chia seeds and exchanged the prunes for Mixed Dry Fruits.  Tasty and Easy Bars to make.

I also used the Honey and Cinnamon Granola and made Granola Muffins.

These are easier for me to eat on the run or throw to a kid in the car on the way to somewhere. I've made a couple of batches of these now and I will certainly be making them again.  These are a filling dense muffin to get you going for the morning not a light and fluffy cake. I was  surprised how filling they are! Makes 12 large muffins.

Granola Muffins

Ingredients

450g Five:am Honey and Cinnamon Granola

21/2 cups Self Raising Flour

1 cup Milk

1/2 cup Coconut Oil

2 tablespoons Honey

1 cup of Mixed Dried Fruit  (or a chopped single dried fruit if you prefer)

1/2 cup of Coconut (desiccated or flakes)

1 egg

2 tablespoons Chia Seeds

1 teaspoon Ground Cinnamon

Method

Pre heat oven to 170 degrees Celsius.

Grease or oil spray and line a 12 hole muffin tin.

In a bowl mix together the Granola, Honey, Fruit and Coconut and Coconut Oil.

Leave that to rest.

In a large bowl mix together Flour, Chia Seeds and Cinnamon.

Create a well and add the egg and milk.  Combine and stir well.

Fold into the Flour batter your Granola Mix.

Spoon into your Muffin tin.  If you've sprayed and greased the tin you can build them up high they won't rise and spill over.

Bake for 20 - 25 min. Till they are cooked through.
