No bake, no butter and no refined sugar.  It can be doubled and freezes well

This slice is so good.  If you like Peanut Butter and Chocolate you will love it .... love it.

Its no bake, no butter and no refined sugar.  It can be doubled easily and it freezes well.

Ingredients:
3 cups rolled oats
1 cup of smooth peanut butter (I use no added sugar or salt)
1/4 coconut oil
1 teaspoon vanilla extract
1 teaspoon sea salt flakes
3 Tablespoons of rice malt syrup or raw honey
10 medjool dates - chopped
250g dark chocolate for melting.


Method:

line a 30x20 tin with baking paper leaving some to hang over the edge.
 

In a food processor pulse your dates until chopped up finely.

Then add to the processor the peanut butter, coconut oil, malt syrup and vanilla, pulse until smooth.

Then add the oats and pulse until well combined.

Pour the mixture into your tray and press in evenly.

Melt your dark chocolate in the microwave and pour over the oat mixture. Evenly smooth out over base.

Sprinkle Sea Salt evenly over the chocolate.

Refridgerate for at least four hours.  Cut into slices.

 

Note: In our home anything with nuts on top in the freezer like slices and muffins etc.  contains nuts and can not be taken to school. This slice has flaked almonds on top so its not accidentally taken by the kids when packing their snacks for school.  Easy way to avoid a possible tragedy.
